Vegetable Curry - Daisy aunty

Ingredients

1/2 kg vegetables (toor dal, gosale/ridge gourd, boble/bottle gourd, alsande/string beans, benda/okra, drumsticks)
salt to taste 

To grind:
1/2 coconut - grated
4 dry round chillies (motwi mirsaang)
2 dry long red chillies 
1 tbsp coriander seeds
1/2 tsp jeera 
1 tbsp mustard seeds
3 peppercorns
1 onion
2 cloves garlic
marble size tamarind

For seasoning: *Optional
5-6 cloves garlic with skin (mashed)
1 sprig curry leaves
1/2 tsp mustard seeds
oil

Steps:
  1. Grind the ingredients together with water to a fine paste. 

  2. In a vessel, add dal and water and cook. 
  3. When the dal is cooked, add the vegetables of your choice with salt. 
  4. Add the ground masala and the masala water and bring to a boil. 
  5. Adjust salt and vinegar if needed. 

  6. In a tadka pan, heat oil. 
  7. Add the garlic and fry. 
  8. Add the curry leaves and fry. 
  9. Add the mustard seeds. When they splutter, turn off the gas. 
  10. Add the tadka to the curry.
