Makes 12 medium sized cookies
Ingredients:
2 cups almond flour
3 tbsp sugar
1 tsp baking powder
2 tbsp vanilla essence
1/4 tsp salt
1/2 - 3/4 cup water
1/2 cup chocolate chip cookies
2 tbsp jam
Steps:
- Preheat the oven to 350F (175C). Line a baking tray with parchment paper.
- In a large bowl, mix the almond flour, sugar, baking powder and salt. Break up all lumps.
- Add water a little at a time and stir until blended. The texture should feel like wet sand so add just enough water to be able to shape it.
- Mix in the chocolate chips.
- Scoop a little dough and shape into 1/2" thick cookies and place on the baking tray, keeping about 2" between each cookie.
- Optional: Lightly press the center of a few cookies and fill with jam, nuts or other fillings of your choice.
- Bake for 15-20 minutes until light golden and set at the centers. Keep in mind that the cookies are chewy and don't get flat as they bake.
- Broil for 1 minute and then remove from the oven.
- Transfer to a cooling rack and allow to cool.
- Serve with cold milk, if desired.
