Almond Flour Cookies - Jean

Makes 12 medium sized cookies

Ingredients:
2 cups almond flour
3 tbsp sugar
1 tsp baking powder
2 tbsp vanilla essence
1/4 tsp salt
1/2 - 3/4 cup water
1/2 cup chocolate chip cookies
2 tbsp jam

Steps:
  1. Preheat the oven to 350F (175C). Line a baking tray with parchment paper.
  2. In a large bowl, mix the almond flour, sugar, baking powder and salt. Break up all lumps.
  3. Add water a little at a time and stir until blended. The texture should feel like wet sand so add just enough water to be able to shape it.
  4. Mix in the chocolate chips. 
  5. Scoop a little dough and shape into 1/2" thick cookies and place on the baking tray, keeping about 2" between each cookie. 
  6. Optional: Lightly press the center of a few cookies and fill with jam, nuts or other fillings of your choice. 
  7. Bake for 15-20 minutes until light golden and set at the centers. Keep in mind that the cookies are chewy and don't get flat as they bake.
  8. Broil for 1 minute and then remove from the oven.
  9. Transfer to a cooling rack and allow to cool. 
  10. Serve with cold milk, if desired.
