Ingredients:
500 gms brinjal
500 gms brinjal
1/2 cup tomato paste
2 tbsp vinegar
1 cup fresh yogurt
1 tbsp minced garlic
1 tsp salt
1 tbsp olive oil
1 tsp cumin/jeera seeds
3 green chillies (chopped)
2 tsp red chilli powder (coarse)
2 tbsp fresh coriander leaves (to garnish)

- Cut the brinjal into slices. Pan fry or grill until golden.
- Mix the tomato paste and vinegar and keep aside.
- In a bowl, blend the yogurt, garlic and salt.
- In a tadka pan, heat olive oil.
- Add cumin seeds. When they splutter, pour this over the yogurt-garlic mixture and set aside.
- In a serving bowl, arrange the brinjal slices.
- Spread the tomato sauce mixture over this.
- Pour the yogurt mixture above and garnish with green chillies, red chilli powder and coriander leaves. Serve immediately.
