Brinjal Salad - Marina

Ingredients:
500 gms brinjal 
1/2 cup tomato paste
2 tbsp vinegar
1 cup fresh yogurt
1 tbsp minced garlic
1 tsp salt
1 tbsp olive oil
1 tsp cumin/jeera seeds
3 green chillies (chopped)
2 tsp red chilli powder (coarse)
2 tbsp fresh coriander leaves (to garnish)

Steps:
  1. Cut the brinjal into slices. Pan fry or grill until golden. 

  2. Mix the tomato paste and vinegar and keep aside.

  3. In a bowl, blend the yogurt, garlic and salt.

  4. In a tadka pan, heat olive oil. 
  5. Add cumin seeds. When they splutter, pour this over the yogurt-garlic mixture and set aside. 

  6. In a serving bowl, arrange the brinjal slices.
  7. Spread the tomato sauce mixture over this. 
  8. Pour the yogurt mixture above and garnish with green chillies, red chilli powder and coriander leaves. Serve immediately.
