Malabar Mutton Curry - Karen Pereira

Ingredients:
250 grams mutton (cut and cleaned)
2 big onions
4 green chilies (sliced)
2 tomatoes (sliced)
 2 tbsp coriander powder
1/2 tsp turmeric powder
1 tsp chilli powder
2 potatoes (peel and cut in quarters)
handful coriander leaves (chopped)
1/4 tsp garam masala powder
salt to taste

To grind:
1" ginger
8-10 cloves garlic 
1 tsp aniseed

Steps:
  1. Grind the ginger, garlic and aniseed to a fine paste. Add a little water if required. Keep aside. 

  2. In a vessel, heat oil.
  3. Add cloves, cinnamon, onions, green chillies and curry leaves. Fry till onions turn translucent.
  4. Add ground paste of ginger, garlic and aniseed. Fry till you get a nice aroma.
  5. Add coriander powder, turmeric powder and chilli powder. Fry well for about 5 minutes.
  6. Add mutton, fry till meat changes colour. Reduce heat and cook on slow fire.
  7. Add water, potatoes and tomatoes and cook till gravy thickens.
  8. Garnish with coriander leaves.
  9. Add a dash of garam masala at the end for better taste.
