Beans Suke/Thoran - Rosy aunty

Ingredients:
1/4 kg french beans/ long beans (finely chopped) 
1 tbsp coconut oil / sunflower oil
1/2 tsp mustard seeds 
1 medium onion (finely chopped)
1 green chilli (finely chopped)
small piece of ginger (finely chopped)
1 sprig curry leaves
1/4 tsp turmeric powder 
4 - 6 tbsp fresh grated coconut 
salt to taste 
water if required 

Steps:
  1. In a pan/kadai, heat oil.
  2. Add mustard seeds. When it begins to crackle, add ginger, green chilli, curry leaves.
  3. Add onion, mix well and saute on a low flame till onions turn translucent. 
  4. Add turmeric powder, mix well. 
  5. Add chopped beans. Mix and add salt. Sprinkle 2 - 3 tbsp of water. 
  6. Mix well, cover and cook on low heat. Check in between, sprinkle more water if required and cook till the beans are almost done.
  7. Add coconut, mix and cook till completely done.
