Ingredients:
1/4 kg french beans/ long beans (finely chopped)
1 tbsp coconut oil / sunflower oil
1/2 tsp mustard seeds
1 medium onion (finely chopped)
small piece of ginger (finely chopped)
1 sprig curry leaves
1/4 tsp turmeric powder
4 - 6 tbsp fresh grated coconut
salt to taste
water if required
Steps:
- In a pan/kadai, heat oil.
- Add mustard seeds. When it begins to crackle, add ginger, green chilli, curry leaves.
- Add onion, mix well and saute on a low flame till onions turn translucent.
- Add turmeric powder, mix well.
- Add chopped beans. Mix and add salt. Sprinkle 2 - 3 tbsp of water.
- Mix well, cover and cook on low heat. Check in between, sprinkle more water if required and cook till the beans are almost done.
- Add coconut, mix and cook till completely done.
