Goan Pork Sausage Pulao - Athena

Ingredients:
1 packet Goan pork sausage (lingis)
2 small pieces cinnamon
4 cloves
4 pepper corns
1 star anise
1 medium onion (chopped)
1 tbsp ginger garlic paste
1 1/2 tsp chilli powder *(optional)
2 tsp jeera powder
1/4 tsp turmeric
2 tomatoes (finely chopped) or tomato paste
2 cups basmati rice
2 1/4 tsp salt

Steps:
  1. Cook the sausages in a little water for 20 minutes to get the fat out.
  2. Soak 2 cups of rice in water for 20 minutes.
  3. In the pulao vessel, fry cinnamon, cloves, pepper corns and star anise.
  4. Add the onion, ginger garlic paste, chilli powder, jeera powder and turmeric. Fry.
  5. Add tomatoes and saute till cooked.
  6. Add the sausage and stir for 2 minutes. If you are using the liquid from the boiled sausage, adjust the quantity of water when adding rice. 
  7.  Add soaked basmati rice with salt. Cook until done. (If you are using an electric stove, cook on high for 10 minutes, turn off heat and let it cook in the residual heat for 15 minutes.)
