Ingredients:
4 tbsp ghee
100 gms white chocolate
3 tbsp ghee
1 ripe avocado
1 cup almond flour
1/4 cup sugar
1 tsp baking soda
2 tbsp vanilla essence
1 cup milk
1 cup blueberries
Steps:
- Preheat the oven to 350F and line a baking dish with parchment paper. Apply a little ghee on the parchment paper and keep it ready.
- Melt ghee and white chocolate together in a microwave in intervals. Keep stirring till it's fully combined. Keep aside.
- To a blender jar or food processor, add a ripe avocado and blend until smooth.
- Add in almond flour, sugar, melted chocolate mix, baking soda, vanilla essence and milk. Blend until smooth, scraping down the sides as necessary. If it's too thick for the blender to run, add a little milk.
- Finally, mix in fresh blueberries but don't blend it.
- Transfer the batter to the baking dish and smooth the top. Decorate with blueberries.
- Bake for 45 minutes on 350F. Insert a toothpick, if it comes out clean, it's done.
- Cool, then refrigerate for 2-3 hours.
