Avocado Chocolate Cookies - Jean

Ingredients:
1 1/4 cups all-purpose flour
1 tsp baking powder
3/4 tsp salt
2/3 cup cocoa powder
1/4 cup coconut oil
1/4 cup avocado
3/4 cup sugar (1 - 1 1/2 cups if you like it sweet)
1 1/2 tbsp vanilla extract
1/2 - 3/4 cup almond milk
1/2 cup chocolate chips

Steps:
  1. Preheat the oven to 350F. Line a large baking sheet with parchment paper and set aside.

  2. In a medium bowl, whisk together the flour, baking powder, salt, and cocoa. Set aside.

  3. In a grinder jar, blend the avocado and coconut oil. 
  4. Add sugar and vanilla extract and blend together until smooth.
  5. Add half of the flour mixture and half the milk. Blend till combined. (If your blender can handle it, add all at once. I made it in 2 batches.)
  6. Then add the rest of the flour mixture and milk. Blend once again till combined.
  7. Transfer to a large bowl and stir in the chocolate chips. 
  8. Scoop a tablespoon at a time into the baking sheet. Decorate with chocolate chips.
  9. Bake at 350F for 12-15 minutes. Insert a toothpick to check if it comes out clean. Let it cool then store in an airtight container.
