Ingredients:
1 1/4 cups all-purpose flour
1 tsp baking powder
3/4 tsp salt
2/3 cup cocoa powder
1/4 cup coconut oil
1/4 cup avocado
3/4 cup sugar (1 - 1 1/2 cups if you like it sweet)
1 1/2 tbsp vanilla extract
1/2 - 3/4 cup almond milk
1/2 cup chocolate chips
Steps:
- Preheat the oven to 350F. Line a large baking sheet with parchment paper and set aside.
- In a medium bowl, whisk together the flour, baking powder, salt, and cocoa. Set aside.
- In a grinder jar, blend the avocado and coconut oil.
- Add sugar and vanilla extract and blend together until smooth.
- Add half of the flour mixture and half the milk. Blend till combined. (If your blender can handle it, add all at once. I made it in 2 batches.)
- Then add the rest of the flour mixture and milk. Blend once again till combined.
- Transfer to a large bowl and stir in the chocolate chips.
- Scoop a tablespoon at a time into the baking sheet. Decorate with chocolate chips.
- Bake at 350F for 12-15 minutes. Insert a toothpick to check if it comes out clean. Let it cool then store in an airtight container.
