Chicken in Hot Garlic Sauce - Chrysl

Ingredients:
1 kg chicken
4 dry red chillies (sliced)
6-8 dry red chillies (to make chilli paste)
100 gms tomato paste
1 pod garlic (finely chopped)
2" ginger (finely chopped)
1 tbsp soy sauce
2 tbsp red chilli sauce
1 tbsp tomato ketchup
1/2 tsp white pepper powder
1 tbsp vinegar
1 tbsp sugar
1 tbsp corn flour
salt to taste
1-2 cups water for the gravy
spring onions (to garnish)
3-4 tbsp oil
oil for deep frying

For the marinade
1 egg
4 tbsp cornflour
2 tbsp maida
1 tsp ginger garlic paste
1 tbsp soy sauce
1 tbsp vinegar
1 tsp white pepper powder
1/2 tsp salt

Steps:
  1. Soak the dry red chillies in boiling water for an hour. Drain the water and grind to a coarse paste. Set aside. 

  2. In a bowl combine all the ingredients for the marinade, add the chicken and marinate for half an hour.
  3. Deep fry the chicken in batches till golden brown and cooked through. 

  4. Heat oil in a wok and fry the ginger and garlic till aromatic. 
  5. Add in the sliced red chillies and fry for a minute or two. Be careful not to burn the chillies.
  6. Now add the chilli paste and fry for 2-3 minutes.
  7. Add the tomato paste and continue to fry for another 2-3 minutes. 
  8. Add around 1-2 cups of water according to desired consistency and bring to a boil.
  9. Add the soy sauce, red chilli sauce, tomato ketchup, pepper powder, vinegar, sugar and salt to taste. Mix well. 
  10. Dilute the corn flour in 3-4 tbsp water and add this to the gravy.
  11. Once the gravy starts to thicken, add the fried chicken pieces. Continue to cook for another 5 minutes.
  12. Garnish with chopped spring onion. Serve hot with noodles or fried rice.
