Parathas - Maizy aunty

Ingredients:
oil and ghee for frying

For the dough
1 cup maida/all purpose flour
1 cup wheat flour
1/2 tsp salt
2 tsp sugar
1 tbsp oil or ghee 
warm water (as needed)
ghee (to smear on each layer)

Steps:
  1. Mix the maida, wheat flour, salt, sugar and ghee. Add warm water a little at a time and knead the dough till soft. Keep it covered for 15 minutes.
  2. Divide the dough into equal parts and shape into smooth balls. 
  3. Flatten the balls. Using a rolling pin, shape it round like a chapati and sprinkle flour as needed to prevent sticking.
  4. Apply ghee evenly across the layer, then roll it lengthwise.
  5. Carefully shape it in to a spiral, then lightly flatten it and again, shape the parathas round with a rolling pin to create layers.
  6. Heat oil and ghee in a pan.
  7. Fry the parathas on both sides till cooked.
