Ingredients:

For the marinade
2 tsp red chilli powder
1/2 tsp turmeric powder
1/2 tsp ginger garlic paste
2 tbsp vinegar
1/2 tsp salt
For the stuffing
1 medium sized onion (chopped)
1 small tomato (chopped)
1" ginger (chopped)
5-6 cloves garlic (chopped)
2 green chillies (chopped)
1/2 tsp mustard seeds
3-4 fenugreek seeds
1/4 tsp turmeric powder
1/4 tsp red chilli powder
1/4 tsp cumin powder
1/4 tsp coriander powder
1 tsp vinegar
2 tbsp chopped coriander leaves
salt to taste
2-3 tbsp coconut oil
Steps:

For the stuffing

1 small tomato (chopped)
1" ginger (chopped)

1/4 tsp red chilli powder
1/4 tsp cumin powder
1/4 tsp coriander powder
1 tsp vinegar
2 tbsp chopped coriander leaves
salt to taste
2-3 tbsp coconut oil
Steps:
- Clean and gut the fish. Make an incision on either sides of the fish, up to the bone to form pockets. (Refer to the video here)
- Apply the marinade evenly onto the fish and marinate for an hour.
While the fish marinates, prepare the stuffing. - Heat coconut oil in a pan.
- Add the fenugreek and mustard seeds.
- Once they start to splutter, add ginger, garlic and green chillies. Fry till the garlic turns golden.
- Add chopped onions and fry till they are translucent.
- Add chopped tomatoes and cook till soft.
- Add turmeric, red chilli, cumin and coriander powders, vinegar and salt to taste. Continue to cook for another 2-3 minutes till the mixture is well combined.
- Add chopped coriander leaves and mix.
- Let the mixture cool completely before stuffing it into the fish.
- Secure the fish using a twine, to prevent the stuffing from falling out while frying. (Refer to the video here)
- Shallow fry in coconut oil till both sides have a nice golden brown colour, about 10 minutes on either side for a large fish.
