Stuffed Pomfret - Chrysl

Ingredients:
1 medium to large size white pomfret (500 gms approximately)

For the marinade
2 tsp red chilli powder
1/2 tsp turmeric powder
1/2 tsp ginger garlic paste
2 tbsp vinegar
1/2 tsp salt

For the stuffing
1 medium sized onion (chopped)
1 small tomato (chopped)
1" ginger (chopped)
5-6 cloves garlic (chopped)
2 green chillies (chopped)
1/2 tsp mustard seeds
3-4 fenugreek seeds
1/4 tsp turmeric powder
1/4 tsp red chilli powder
1/4 tsp cumin powder
1/4 tsp coriander powder
1 tsp vinegar
2 tbsp chopped coriander leaves
salt to taste
2-3 tbsp coconut oil

Steps:
  1. Clean and gut the fish. Make an incision on either sides of the fish, up to the bone to form pockets. (Refer to the video here)
  2. Apply the marinade evenly onto the fish and marinate for an hour.

    While the fish marinates, prepare the stuffing.
  3. Heat coconut oil in a pan.
  4. Add the fenugreek and mustard seeds.
  5. Once they start to splutter, add ginger, garlic and green chillies. Fry till the garlic turns golden.
  6. Add chopped onions and fry till they are translucent.
  7. Add chopped tomatoes and cook till soft.
  8. Add turmeric, red chilli, cumin and coriander powders, vinegar and salt to taste. Continue to cook for another 2-3 minutes till the mixture is well combined.
  9. Add chopped coriander leaves and mix.
  10. Let the mixture cool completely before stuffing it into the fish.
  11. Secure the fish using a twine, to prevent the stuffing from falling out while frying. (Refer to the video here)
  12. Shallow fry in coconut oil till both sides have a nice golden brown colour, about 10 minutes on either side for a large fish.
