Ingredients:
1 kg yellow pumpkin
400 gms sugar
1-2 tbsp cardamom powder
2+3 tbsp ghee
few chopped cashew nuts and raisins

Steps:
- Peel and grate the pumpkin.
- Heat 2 tbsp ghee in a kadai (preferably NOT nonstick).
- Add grated pumpkin and cook till it starts to change colour.
- Now add sugar and mix till the sugar melts. Continue to cook on high flame, stirring constantly.
- Add the cardamom powder. Cook until the halwa gets a nice dark golden colour and all the water has evaporated.
- In a separate pan, heat the remaining ghee and fry the cashew nuts and raisins.
- Add this to the halwa and mix well.
- Serve hot with vanilla ice-cream.
