Yellow Pumpkin/Kashi Halwa - Chrysl

Ingredients:
1 kg yellow pumpkin
400 gms sugar
1-2 tbsp cardamom powder
2+3 tbsp ghee
few chopped cashew nuts and raisins

Steps:
  1. Peel and grate the pumpkin.
  2. Heat 2 tbsp ghee in a kadai (preferably NOT nonstick).
  3. Add grated pumpkin and cook till it starts to change colour.
  4. Now add sugar and mix till the sugar melts. Continue to cook on high flame, stirring constantly.
  5. Add the cardamom powder. Cook until the halwa gets a nice dark golden colour and all the water has evaporated.
  6. In a separate pan, heat the remaining ghee and fry the cashew nuts and raisins.
  7. Add this to the halwa and mix well.
  8. Serve hot with vanilla ice-cream. 
  9. ENJOY!
