Ingredients:
For the marinade:
20 large size prawns
1 tbsp lemon juice
1 tsp fresh ginger paste
1 tsp fresh garlic paste
2 tsp oil
1/2 tsp turmeric powder
3 tsp Kashmiri chilli powder
1 tsp coriander powder
1 tsp cumin powder
1/2 tsp garam masala powder
1 sprig curry leaves (chopped)
salt to taste
For frying:
3 - 4 tbsp coconut oil
Steps:
- Clean and devein the prawns, rinse them thoroughly. Add a little salt and lemon juice and rinse them to remove the fishy smell. Drain all the excess water completely.
- Add all the ingredients for the marinade and mix well so that the prawns are coated well. Rest for 1/2 to 1 hour.
- Heat oil in a frying pan, add the prawns without over crowding. Shake the pan lightly so that the spices don't stick to the pan. Fry covered on medium heat for 3 minutes.
- Flip over and fry the other side in a similar manner.
- Add curry leaves and continue frying without covering until the prawns are golden brown and coated with masala on both sides.
