Kerala Prawns Fry - Rosy aunty

Ingredients:

For the marinade:
20 large size prawns
1 tbsp lemon juice                    
1 tsp fresh ginger paste
1 tsp fresh garlic paste
2 tsp oil
1/2 tsp turmeric powder
3 tsp Kashmiri chilli powder
1 tsp coriander powder
1 tsp cumin powder
1/2 tsp garam masala powder
1 sprig curry leaves (chopped)
salt to taste

For frying:
3 - 4 tbsp coconut oil 
1 sprig curry leaves

Steps:
  1. Clean and devein the prawns, rinse them thoroughly. Add a little salt and lemon juice and rinse them to remove the fishy smell. Drain all the excess water completely. 
  2. Add all the ingredients for the marinade and mix well so that the prawns are coated well. Rest for 1/2 to 1 hour.

  3. Heat oil in a frying  pan, add the prawns without over crowding. Shake the pan lightly so that the spices don't stick to the pan. Fry covered on medium heat for 3 minutes.
  4. Flip over and fry the other side in a similar manner. 
  5. Add curry leaves and continue frying without covering until the prawns are golden brown and coated with masala on both sides.
