Trotters Curry (paya) - Karen Pereira

Ingredients:
12 trotters (paya)
a little tamarind
salt to taste
2-3 tbsp ghee 
1/2 onion (sliced)
10 cups of water 

To grind:
1 tsp jeera
1 small piece ginger
4 tsp ghee
15 pepper corns
5 pods cardamom
5 onions
1 tsp turmeric

Steps:
  1. Clean, cut and cook trotters in plenty of water.
  2. Grind the masala to a fine paste. Keep aside.

  3. In a vessel, heat ghee.
  4. Add the sliced onion and fry well.
  5. Add the ground masala and fry till brown.
  6. Then add tamarind water, salt to taste and the cooked trotters.
  7. Simmer for an hour till gravy is thick.
