Mangalore Cashew Macaroons - Jean (Sarah)

Ingredients:
1 egg white
A pinch of cream of tartar
1 cup icing sugar
3/4 cup chopped cashew nuts
1 tsp cardamom powder

Steps:

  1. In a large bowl, add the egg white and the cream of tartar to stabilize them. 
  2. Whip the egg white mix with a handheld mixer, gradually increasing the speed till stiff peaks are formed. 
  3. Mix in the icing sugar 2 tsps at a time until fully incorporated. 
  4. Fold in the chopped cashews and cardamom powder till it is evenly distributed. Be careful not to over mix as you may deflate the meringue. 
  5. Take spoonfuls and dollop it on to the parchment paper, leaving enough space in between. Bake for 15-25 minutes (depending on your oven) on 350F or 180C. (I baked mine for 25 minutes)
  6. Once baked, let them cool completely on a baking rack and store in an airtight container. 
  7. ENJOY!
