Ingredients:
1 egg white
A pinch of cream of tartar
1 cup icing sugar
3/4 cup chopped cashew nuts
1 tsp cardamom powder
Steps:
- In a large bowl, add the egg white and the cream of tartar to stabilize them.
- Whip the egg white mix with a handheld mixer, gradually increasing the speed till stiff peaks are formed.
- Mix in the icing sugar 2 tsps at a time until fully incorporated.
- Fold in the chopped cashews and cardamom powder till it is evenly distributed. Be careful not to over mix as you may deflate the meringue.
- Take spoonfuls and dollop it on to the parchment paper, leaving enough space in between. Bake for 15-25 minutes (depending on your oven) on 350F or 180C. (I baked mine for 25 minutes)
- Once baked, let them cool completely on a baking rack and store in an airtight container.
