Mangalorean Charmuri - Jean

Ingredients:
3 cups puffed rice/murmura 
1 medium onion (finely chopped)
1 large tomato (finely chopped)
1 medium carrot (grated)
1/2 - 1 mango (cut in small cubes)
1/2 cup roasted peanuts
3 tbsp chopped coriander leaves 
2 tbsp coconut oil
1/4 tsp turmeric powder
1/2 - 1 tsp red chili powder
1/4 tsp cumin powder
1 tsp salt 
1/2 lemon  - juice

Steps:
  1. In a large pan or wok, heat 1 tbsp coconut oil. 
  2. Add the puffed rice and roast it for 3-4 minutes, stirring continuously till the rice is crisp. Transfer the puffed rice to a large mixing bowl. 
  3. Add 1 tbsp coconut oil and give it a good toss till the puffed rice is coated lightly. 
  4. Add salt, turmeric powder, chili powder and cumin powder. Mix well. 
  5. Add the mango, roasted peanuts, onion, tomatoes, carrots and lemon juice. Mix well. 
  6. Add coriander leaves. 
  7. ENJOY!
Notes:
  • If you like it more spicy, add 1 finely chopped green chili or more red chili powder.
  • Add 2 tbsp coconut oil when you transfer the puffed rice if you prefer the taste.
