Ingredients:
3 cups puffed rice/murmura
1 medium onion (finely chopped)
1 large tomato (finely chopped)
1 medium carrot (grated)
1/2 - 1 mango (cut in small cubes)
1/2 cup roasted peanuts
3 tbsp chopped coriander leaves
2 tbsp coconut oil
1/4 tsp turmeric powder
1/2 - 1 tsp red chili powder
1/4 tsp cumin powder
1 tsp salt
1/2 lemon - juice
Steps:
- In a large pan or wok, heat 1 tbsp coconut oil.
- Add the puffed rice and roast it for 3-4 minutes, stirring continuously till the rice is crisp. Transfer the puffed rice to a large mixing bowl.
- Add 1 tbsp coconut oil and give it a good toss till the puffed rice is coated lightly.
- Add salt, turmeric powder, chili powder and cumin powder. Mix well.
- Add the mango, roasted peanuts, onion, tomatoes, carrots and lemon juice. Mix well.
- Add coriander leaves.
- ENJOY!
Notes:
- If you like it more spicy, add 1 finely chopped green chili or more red chili powder.
- Add 2 tbsp coconut oil when you transfer the puffed rice if you prefer the taste.
