Recipe by Chrysl Castelino
Ingredients:
1 kg medium to large sized prawns2 tbsp salted butter
2 pods garlic (roughly chopped)
1/2 cup chopped spring onions
oil for deep frying
For The Batter
1 egg
3 tbsp corn flour
1 tbsp maida
1/4 tsp pepper powder
salt to taste
water as required
Steps:
- Peel, de-vein and wash the prawns well.
- In a bowl, whisk the egg and add the rest of the ingredients for the batter and combine well. Do not make the batter too thick or too runny.
- In a pan, heat sufficient oil for deep frying.
- Dip the prawns one at a time in the batter and deep fry till golden brown. Do not over crowd the pan. Fry only 5-6 prawns per batch. Drain excess oil a kitchen napkin.
- In another pan, heat butter and fry the chopped garlic till it turns golden brown.
- Add half the spring onions and fry for a minute.
- Add in the fried prawns and toss till well combined.
- Check for seasoning. If required season with some salt.
- Garnish with the remaining spring onions.
