Prawn Butter Garlic - Chrysl

Ingredients:
1 kg medium to large sized prawns
2 tbsp salted butter
2 pods garlic (roughly chopped)
1/2 cup chopped spring onions
oil for deep frying

For The Batter
1 egg
3 tbsp corn flour
1 tbsp maida
1/4 tsp pepper powder
salt to taste
water as required 
 
Steps:
  1. Peel, de-vein and wash the prawns well.

  2. In a bowl, whisk the egg and add the rest of the ingredients for the batter and combine well. Do not make the batter too thick or too runny.

  3. In a pan, heat sufficient oil for deep frying.
  4. Dip the prawns one at a time in the batter and deep fry till golden brown. Do not over crowd the pan. Fry only 5-6 prawns per batch. Drain excess oil a kitchen napkin.

  5. In another pan, heat butter and fry the chopped garlic till it turns golden brown.
  6. Add half the spring onions and fry for a minute.
  7. Add in the fried prawns and toss till well combined.
  8. Check for seasoning. If required season with some salt.
  9. Garnish with the remaining spring onions.
