Alsande Stir Fry - Oreen

Ingredients:
500 gms alsande/string beans
1/2 cup fresh grated coconut
1 large onion (finely chopped)
5 cloves garlic (minced)
1/2 tsp turmeric powder
2 tsp pepper powder
2 tsp cumin powder
2 tsp kashmiri chili powder
2 tsp coriander powder
2 tbsp coconut oil

Steps:
  1. In a wok, heat coconut oil.
  2. Add onions, garlic and grated coconut. Saute for 3 minutes.
  3. Add 1/2 tsp turmeric, and 1 tsp each of chili powder, coriander powder and cumin powder. Fry for 5-7 minutes.
  4. Add the vegetables and saute on high heat for 5 minutes.  
  5. Reduce heat to medium, then add 1 tsp each of chili powder, coriander powder and cumin powder. Stir continuously. 
  6. Cook covered till vegetables are cooked and crunchy.
