Recipe by Victor Rodrigues
Ingredients:
2 kg goat meat/mutton
1 cup greek yogurt
2 tsp salt
2 cups sliced onions
2 tbsp ginger paste
2 tsp garlic paste
4 bay leaves
2 cinnamon sticks
6 green cardamom
10 pepper corns
1 cup oil
2 tsp cumin powder
2 tsp coriander powder
2 tsp chili powder
2" ginger (chopped)
To garnish:
1 tsp sugar
1 tbsp lemon juice
2 tbsp rose water
2-3 green chilies *Optional
Steps:
- Marinate meat with salt and yogurt for 2 hours.
- Mix ginger paste, garlic paste, coriander powder, cumin powder and chili powder with 1 cup water. Set aside.
- Heat oil. Add bay leaves, cinnamon, cardamom and pepper corns.
- Add sliced onions and fry till brown.
- Add the spice mix and continue cooking til the oil separates.
- Add the marinated meat. Slow cook for 2 hours.
- Add sugar, green chili, lemon juice and rose water.
- Cook on low heat for 20 minutes.
