Ingredients:
1 kg mutton or beef
1 onion (sliced)
1 tomato (chopped)
salt to taste
To grind:
1 bunch coriander leaves
1/2 bunch mint leaves
1" cinnamon
5-6 cloves
3 green cardamom
1 black cardamom
4-5 cashew nuts (soaked) *Optional
5-6 green chilies
1/2" ginger
1 clove garlic
1 tbsp coriander seeds
1 tsp cumin seeds
1 tsp badishep/ fennel seeds *Optional
1/2 tsp pepper corns
1/2 tsp turmeric powder
1/4 tsp stew powder *Optional
tiny ball of tamarind or 1/4 tsp tamarind paste
To season
2-3 tbsp ghee
1 onion (sliced)
1 tomato (chopped)
Steps:
- Pressure cook mutton till almost cooked with an onion, tomato and some salt. Set aside.
- In a vessel, heat ghee.
- Add sliced onions and fry till brown.
- Add chopped tomatoes, fry until it becomes mushy.
- Add the ground masala. Fry until oil separates.
- Add mutton pieces and cook covered till mutton is soft.
- If desired, add potatoes and cook covered for 5 minutes.
