Ingredients:
1 kg pork (with fat)
2 sprigs mint leaves *(Optional)
2 tsp vinegar
2-3 tsp sugar
salt to taste
oil
To grind
1 tsp cumin seeds
7-8 kashmiri chilies
2 cinnamon sticks
4-6 cloves
15-20 peppercorns
1 tsp turmeric
6-8 cloves garlic
1/4 tsp tamarind paste
4 medium onions
Steps:
- Grind the masala and set aside. Rinse the grinder jar with a little water and reserve it for later use.
- Wash the pork. Pressure cook pork with salt until done.
- Cool, then cut the pork into fairly thin slices with fat on each piece, if possible.
- In a pan, heat oil. On medium flame, fry the pork slices on both sides till golden. Keep aside.
- Heat oil again. Add the ground masala and fry for 10 minutes on low flame. Add the masala water according to desired consistency.
- Add mint leaves (optional), vinegar, and sugar.
- Add the fried pork slices and cook on simmer for 5-10 minutes till the gravy thickens. Adjust salt, sugar, vinegar and spice levels according to taste.
