Recipe by Mildred (Milli)
Ingredients:
1 kg chicken
1 large onion (sliced)
1 tomato (chopped)
For the rice
2 cups basmati rice
1 cinnamon stick
6-7 cloves
4 cups water
1 1/2 tsp salt
1 tbsp ghee
To grind
2 large onions
1 large bunch coriander leaves
1/4 bunch mint leaves
1" ginger
6-7 garlic pods
5 green chillis
1 tsp pepper corns
1 tsp jeera seeds
1 cinnamon stick
8-10 cloves
1 marble size ball of tamarind
1/2 tsp turmeric
To garnish
1 large onion (fried in ghee till brown)
coriander leaves
1/2 tsp ghee
Steps
- Heat ghee.
- Add 1 sliced onion, 1/4 tsp salt and fry till golden. Add a tomato and fry well.
- Add the ground masala and fry till the raw smell goes and it thickens slightly.
- Add the chicken, 1/2 cup water, salt and boil on low-medium heat till 75% cooked.
- Separately, boil basmati rice till almost cooked with ghee, salt, cinnamon and cloves. Strain it.
- Layer with masala, rice and chicken. Cook covered on simmer for 15 minutes.
- Garnish with fried onions and coriander leaves.
