Ingredients:
Meat Prep
600g pork (diced 2cm)
1 bay leaf
2" cinnamon
3 petals star anise
3 green chillies (finely chopped)
6 cloves garlic (finely chopped)
2" ginger (finely chopped)
1 tsp pepper powder
1 tsp kashmiri chilli powder
1/2 tsp salt
For the Sauce:
10 cloves garlic finely chopped.
2 large onions (cut in quarters)
2 green capsicum (cut in cubes)
1 tbsp soy sauce
1 tbsp ketchup
1 tbsp vinegar
1 tbsp spring onion (chopped)
salt to taste
Steps:
- Add all the ingredients for the meat prep to a pressure cooker. Mix well. Pressure cook on medium flame for 2-3 whistles without adding any water.
- Once the pressure releases, open the cooker and continue to cook until any liquid evaporates and the meat fries in its own fat. Transfer the meat to a plate and set aside.
- To the same vessel, add the chopped garlic and saute on medium flame.
- Add the cooked meat and fry for 5 minutes.
- Add the onion and saute on high for 2 minutes.
- Add capsicum cubes. Saute on high for 2 minutes.
- Add soy sauce, ketchup and vinegar. Mix well and saute on high for 2 minutes.
- Add salt to taste. Mix well.
- Garnish with chopped spring onion. Turn off the flame.
