Pork Chilli - Victor

Ingredients:
Meat Prep
600g pork (diced 2cm)
1 bay leaf
2" cinnamon
3 petals star anise
3 green chillies (finely chopped)
6 cloves garlic (finely chopped)
2" ginger (finely chopped)
1 tsp pepper powder 
1 tsp kashmiri chilli powder 
1/2 tsp salt

For the Sauce: 
10 cloves garlic finely chopped.
2 large onions (cut in quarters)
2 green capsicum (cut in cubes)
1 tbsp soy sauce
1 tbsp ketchup
1 tbsp vinegar
1 tbsp spring onion (chopped)
salt to taste

Steps:
  1. Add all the ingredients for the meat prep to a pressure cooker. Mix well. Pressure cook on medium flame for 2-3 whistles without adding any water.
  2. Once the pressure releases, open the cooker and continue to cook until any liquid evaporates and the meat fries in its own fat. Transfer the meat to a plate and set aside.
  3. To the same vessel, add the chopped garlic and saute on medium flame.
  4. Add the cooked meat and fry for 5 minutes. 
  5. Add the onion and saute on high for 2 minutes.
  6. Add capsicum cubes. Saute on high for 2 minutes.
  7. Add soy sauce, ketchup and vinegar. Mix well and saute on high for 2 minutes. 
  8. Add salt to taste. Mix well. 
  9. Garnish with chopped spring onion. Turn off the flame.
